2 Cups of Jasmine Rice
2 Cups of water + add more later if needed
4 tablespoons of Icing Sugar or Sugar
Raspberries or desired fruit
Garnish with Coconut
This is a very simple, quick and cheap desert.
Simply take cooked rice, Jasmine is ideal but other white rice will work fine, sift or
sprinkle with sugar or Icing sugar and sweeten to your liking. Be sure to then reheat the
rice to dry off the additional watery moisture that the sugar brings out of the rice, a
microwave is perfect and needs only be enough to get some steam off the rice. Stir the
sweetened rice with a spoon or fork helping to cool off the rice and allow the sugar to
form a sticky texture with the rice. Once cooled the rice will be a perfect sticky rice for
pressing in the Rice cube. If it separates in the press it’s still too moist and needs further
reheating to evaporate off the excess water.
Once you have your sticky rice you can simply press fruit into the Rice Cube by placing
half the rice in the Rice Cube well. Be sure to position the fruit around the inner face of
the Rice Cube well so you will see the fruit upon completing the press,
Don’t over fill with fruit and maintain at least 70% rice to bind the ingredients, keep fruit
apart to allow the Rice to envelop the fruit.
Then fill the remaining well with rice and press to form your cube.
Serve or refrigerate in an air tight container.
Serving suggestion: serve with custard or sweet Coconut milk
